I'm going survivalist and relic hunting to start out with. You get leather and cloth just from killing stuff. It probably won't be much of a moneymaker but makes it easy to stock up on stuff for when I switch to an actual trade.

I always go full gathering only dipping into crafting if more than two professions are allowed like Swtor and I need/want a specific item and it requires you to have a specific tradeskill level to make AND equip or use it ( i.e WoW Engineering grenades and such ). Other than that it's strictly store and sell.
