So, for those who will be reserving character names on January 11, we will have time to select a server for the guild before then. Per a post by NC staff on the official forum yesterday in this thread:

I wonder how many servers there will be too. Guess we'll find out in about three weeks.

I will be arriving in Cancun for a couple days on the 11th. I'm hoping to be able to connect during this time and attempt to grab my 2 names. Looking forward to our permanent server home selection!
